Tofu tastes good!

Hello😊  I am excited to share another day with you!  I have a bunch of support that I didn't realize we had, and that makes it even better.  Today a friend of ours called and gave me encouraging words and some websites to help us with our journey.  They have been doing it for 21 days, and are really satisfied with their choice.  They live in a small town with little access to many vegan choices, so that can be very irritating to find foods to eat. Here is a website they recommend: http://www.pcrm.org/kickstartHome/mealplan/original-menu  Also, my wife is out of town on business, and she struggled with finding quick bites to eat in a really small town because everything closed early.  That is a little nerve racking and it can cause a bad choice of eating whatever.  The lesson I learned from that is to pack snacks because you never know what situation you might be in!

So today's meal was fun and easy to prepare, and it was very delicious!  When I shopped at Sprouts, I made sure to buy tofu to eat with some of the sauces I have in my cabinet.  Since we are trying to clean out our cabinets for moving, I wanted to use as much of the stuff we have to avoid packing it later.  So today I used a bourbon chicken sauce. There are a few calories because it is sweet and spicy, but it is not bad since I am not adding too many calories in the meal.


In order to cook the meal, I literally looked in my fridge at my veggies and thought what could have a good crunch or at least feel chewy (helping me get over the idea that I want to chew chicken).  I decided on onion and zucchini.  I added a little bit of grape seed oil in a skillet and sauteed the tofu a bit (I have extra firm).  I then added the zucchini and cooked a bit more, then followed by the onion. Throughout this process, I added a bit of salt, but not much because I knew the sauce was salty enough.  The tofu didn't really change much, but it made me feel better as if I were cooking it. 😁



 I sauteed until the onion seemed a little translucent, and then I added the sauce.  I let this simmer for about 7 minutes.  The finished product looked and smelled delicious!



After the ingredients fused together, I served the finished product on a small scoop of jasmine rice topped with green onion.  I actually scooped a lot of rice at first because I was thinking to myself that I can add more since I do not have that many calories.  But I then thought about the idea that I can still overeat as a Vegan.  I can do carb overload and still gain weight!  So I put some rice back and I felt better about my serving amount.

As I ate my new meal, I felt very proud and content with my choices and the taste!  It satisfied my texture craving, and the flavor was perfect!  I am not full, and I can feel it already digesting since it's not an abundance in my stomach at once.  So, I am going to finish drinking my sparkling flavored water, and enjoy a small scoop of coconut milk frozen treat (mango)!

Another day down, and I feel better today than I did yesterday.

My First Day

Today was the first day where I really am making an effort and wanting to try a vegan life.  I have eaten vegan foods, in fact, I have made vegan dishes before, so it is not foreign to me.  I decided to take this journey with my wife so we can experience this together.  I was not fully on board at first.  I like cheese! Still going strong!

It has been about two weeks now, and we are still going strong!  As I continue to prep daily, I have been using a lot of recipes off of Pinterest, and I have found some youtube videos that have been really helpful.  I really like Pick Up Limes, and I am going to use a lot of her ideas!  You can find her website here:  https://www.pickuplimes.com/ .   She provides a lot of ideas using bento boxes.  After we move, that will be our next purchase because there is something fun about having your lunches in cute little containers. We have to get back to prepping because I feel as though I waste $ buying food every few days when I can prepare a bunch on the weekend and have it ready for the week.  I want to prepare some quick breakfasts and snacks for sure!
